Sweet Memories
It's Sunday morning and because I just bought local fruit yesterday, I had to find a spot for it the freezer. I needed to take something out to make space so I decided I should make Tractor Jam (maybe pie too, we'll see)!
In the process, I found a bag of frozen grape juice...not just any grape juice- but some from grapes I had grown specifically because of their name, Candace. Even though not spelled the same, I bought them as a tribute to my late sister, Candice...and so the memories begin.
I decided to make a batch of Candace grape jelly. The grapes were small and turned a beautiful shade of pink and were sweet with just a little tartness to the skin- the jelly will be beautiful. In saying all that, it does very much remind me of Candy. She was sweet but had a bite to her too. A beautiful person, I do miss her so.
O.K. onward. I defrost the juice, 4 cups exactly. Put in a big kettle pot on the stove. Add 1 package of pectin and stir real good, bringing to a rolling boil and stir in 5 cups of sugar. Bring back to a full rolling boil and cook for 1 full minute. Take off the stove and put the kettle on a cutting board, one I always use for my jam and jelly making ( it was given to me as a wedding gift from my sister 41 years ago) and then ladle into jars. Wipe off the rims and put on the lids. I made 6 jars and a lovely bit for tasting...now I just need some homemade biscuits and a cup of tea- things Candy loved, and let my memories soar....
