Sunday at the Ranch


It's Sunday.  It's quiet...it's still...no trucks at the shop...it's raining.  Looking out over the back yard and garden, thinking of Mom and Dad.  They loved this place and on a typical Sunday Mom would have already thought of what would be for Sunday dinner, and perhaps would know who was coming.  Mom loved it.  Her children and their families were her joy and she loved to cook and bake, and she did it very well.  So today it feels like a Chili and Biscuit kind of day.  For dessert, well let's see...for my brothers and Dad, and probably my sister Candy, it would likely be biscuits and honey or jam.  And maybe a Poppyseed Cake with caramel frosting for the rest.  Simple but filled with love.

Chili and Biscuits


Poppyseed Cake

Poppy Seed Cake


2 cups flour
1.5 cups sugar
3 tsp. baking powder
1 tsp. salt 
3/4 cup milk
1/2 cup shortening
4 egg whites
2 tsp. vanilla or 1/2 tsp. almond extract
1/4 cup poppy seeds 
1/4 cup milk

Mix poppy seeds and 1/4 cup milk together, let stand 30 min.
Combine first 6 ingredients and mix on low speed 2 min. Add 
Egg whites and flavour and poppy seeds and beat 2 more min. 
Pour into a greased and floured 9x13in pan and bake in a preheated 
350 degrees oven for 30 to 35 min. Or until top springs back when 
Lightly touched
